Banana and Nutella bread bites

Now, I don’t know about you, but just when I tell myself I’ll eat more fruit, I always end up with way too many bananas at the end of the week. So instead of throwing these in the bin, I use these overripe bananas to make the best banana bread you can imagine (because it still counts as 1 of your 5 a day right?).

These are super moist and are the perfect accompaniment to a hot cup of tea…Yorkshire tea to be precise 😉 So if you need a little pick me up or you want something easy to make after a long week, then this budget friendly recipe will give you all the feels.

Ready to get started on this yummy banana bread recipe? Here’s everything you’ll need!

Ingredients

  • 3-4 Very ripe bananas
  • 1 Ripe banana (optional for decorating)
  • 150g Brown sugar
  • 100g Salted butter (melted)
  • 1/2 tsp Baking soda
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 200g Plain flour
  • Pinch of salt
  • Nutella or chocolate chips for decorating

Method

  1. Preheat your oven to 170°C (fan)
  2. Line your tin, using a bit of butter to make sure the grease proof paper sticks to the tin (I used a 9×9 inch tray but you can use a loaf tin too, the cake will just be taller in height).
  3. Mash up your 3-4 bananas in a bowl until they become smooth.
  4. Melt your butter and then combine it with your banana mix until fully incorporated. I melt this on the stove in a pan but you can also use a microwave, just be sure to do this in short bursts of 20seconds.
  5. Now add in all your dry ingredients: brown sugar, egg, baking soda, salt, vanilla extract and plain flour. If you’re using chocolate chips you can also add this in after you’ve mixed the dry ingredients.
  6. Pour your mixture into your tray and spread it out evenly
  7. Scoop your Nutella onto the tray. Now using a knife or skewer, blend the Nutella in with the mixture using “S” shaped movements
  8. Optional – cut your ripe banana into thin slices and place on top of the mixture. Sprinkle some brown sugar over each banana slice – I find this gives it a nice gooey texture with a bit of crunch when baked.
  9. Bake for 30mins or until a toothpick or skewer comes out clean once inserted into the cake. *Note – if you’re using a deeper tin or doubling the recipe you may need to bake for longer. If this is the case, check every 10 minutes until it’s cooked
  10. Let the cake cool in the pan for a few minutes before taking it out and enjoying either warm (my favourite) or store in an airtight container once fully cooled.
