Chinese BBQ Pork (aka Char Siu 叉燒)

Char Siu is one of my childhood favourites and is super delicious. It’s full of flavour and the meat just melts in your mouth.

This is a super simple recipe that you can try at home and the best part is you don’t need to be exact with the measurements! But for ease I have added some examples to help.

For this dish I like to use pork belly as I prefer the fattier cuts but you can also use pork tenderloin, pork loin or pork shoulder. Using these other cuts will give you a more traditional looking Char Siu dish once cooked as you’ll be able to slice them into thin pieces.

Ingredients

  • 3-4 tbsp Hoisin sauce
  • 2 tbsp Oyster sauce
  • 2 tbsp (or to taste) Light soy sauce
  • 1 tbsp Sesame oil
  • 2-3 tbsp Sugar
  • 1-2 tsp (or to taste) Black pepper
  • 1-2 tsp (or so taste) Salt
  • 1-2 tsp Five spice
  • 1 x Fresh lime juice
  • 500g Pork belly slices

Method

  1. Preheat your oven to 170 oC (338 Fahrenheit).
  2. Add your pork belly to a bowl and then add all of the ingredients. Mix thoroughly, ensuring all of the meat is covered with the marinade. Optional – cover the bowl so that it’s airtight (cling film works best) and leave it in the fridge to marinade over night. If you’re in a rush, you can still make this without marinating over night, simply mix all the ingredients in a bowl and leave for 10-15mins.
  3. Using tin foil (or Aluminium foil if you’re from the US), tear a piece large enough to cover your oven proof tray.
  4. Place the pork belly slices sideways onto the tray and pour all of the marinade over the top.
  5. Transfer the tray to the middle shelf in your oven and cook between 15-20mins on each side (cooking times may vary depending on your oven so be sure to check that the pork is cooked all the way through). At the halfway mark, baste the pork in the marinade before turning it over.
  6. Once cooked, turn off the oven and remove the tray. Let the pork rest for a few minutes before slicing. Traditionally these are cut into thin slices, but you can also cut them into chunkier pieces like I have.

There are many ways you can eat this. You can have it with some rice and *vegetables or steam some bao buns. Whichever you choose, make sure you pour the sauce over the top of your dish!
