
This sauce may not look like much but it is packed with flavour and so easy to make! It takes less than 10 minutes and it goes perfectly with any dish! It’s salty, fresh and slightly sweet.
I normally pair it with my mums Hainanese chicken rice but sometimes when I’m in a rush and still want a tasty dish, I simply add it to some plain white rice. Trust me, this is so good and when you’re short on time, it hits the spot.
Ingredients
- Spring onions (2-3 for 2 people)
- Salt (to taste)
- 2-3 cloves of garlic
- 1 shallot
- 1/2 tsp sugar
- 100-200ml vegetal oil (approx)
Method
- Chop the spring onions, garlic and shallot using a sharp knife and place in a bowl

2. Heat up the oil in a pot. Using a chopstick or any wooden utensil, place the tip into the oil, if lots of bubbles start to form around the chopstick, the oil is ready. Be careful when doing this as it can cause severe burns if it isn’t handled properly.
3. Pour the hot oil over the spring onions. It’ll sizzle as you do this. Stir and then let it rest until you’re ready to eat it.
4. Sprinkle the salt and sugar to taste
Once you try this, you’ll wonder why you didn’t make more of it 😉
You can make larger batches with this, just increase each ingredient accordingly. Ratio wise, you want enough oil to cover half of the spring onions. As the sauce settles, the spring onions will begin to wilt so it’ll look like there’s more oil than you started with.
Also, if you want to add a little kick to the dish, you can thinly slice some ginger and or fresh red chilli and add it in with the spring onions.
